Adukumalli Idli Rice

An indigenous rice variety chosen for soft, wholesome idlis and traditional South Indian breakfasts

A good idli begins long before the batter reaches the steamer.

It begins with the rice.

At Goodness Farm, we look beyond generic “idli rice” and seek out regional and lesser-known rice varieties that have a place in our agricultural heritage and a distinct role in traditional cooking.

Adukumalli Idli Rice is one such variety we are bringing back to the everyday kitchen.

With its short, bold grain characteristics and suitability for idli batter, Adukumalli makes a wonderful choice for preparing traditional idli and dosa while giving you an opportunity to cook with a rice variety that is less familiar than the standard commercial options.

Why Adukumalli for idli?

Idli rice is not simply rice that happens to be used for idli.

The physical characteristics of the grain influence how it behaves during:

Soaking → Grinding → Fermentation → Steaming

For an idli, we want rice that hydrates well during soaking, grinds into a suitable batter and works together with urad dal during fermentation to produce the characteristic soft, porous texture.

That is why traditional idli-making has always relied on specific rice types rather than treating all rice varieties as interchangeable.

A rice variety worth knowing

India has an extraordinary diversity of rice.

Many regional varieties have gradually disappeared from everyday kitchens as a smaller number of commercial varieties became dominant.

At Goodness Farm, our interest in Adukumalli comes from this very idea:

Can we bring more regional rice diversity back to the plate?

Instead of choosing rice only by grain length, whiteness or market popularity, we look at the variety, its culinary behaviour, how it is grown and how minimally it can be processed.

Minimal processing, maximum character

Our Adukumalli Idli Rice is processed with a focus on retaining the natural character of the grain.

The objective is not to over-process the rice into an overly polished, highly refined grain.

Minimal processing helps retain more of the grain's natural outer layers and associated nutrients than intensive polishing.

The final grain remains suitable for traditional idli preparation while retaining more of the character of the original rice.

What about its nutrition?

Rice is primarily an energy-giving cereal, with carbohydrates as its major macronutrient.

But rice is not nutritionally identical across all varieties or processing methods.

The amount of fibre, protein, minerals and other components can vary depending on:

  • Rice variety

  • Soil and growing conditions

  • Grain maturity

  • Milling intensity

  • Degree of polishing

  • Storage

  • Cooking method

Our own laboratory analysis indicates that this Adukumalli Idli Rice has a notable dietary fibre content compared with the regular idli rice variety used as our reference.

It also contributes naturally occurring B-group vitamins and minerals as part of the grain.

We prefer to present this as a property of the particular rice and processing we have tested rather than making a blanket claim that every Adukumalli rice will have exactly the same nutritional composition.

Why fibre in rice matters

Dietary fibre is not digested in the same way as starch.

It contributes to the structure of the food and can influence digestion, satiety and the rate at which carbohydrates are made available during a meal.

However, the fibre content of rice depends strongly on how much of the outer grain is retained during milling.

That is why “rice” alone doesn't tell the complete nutritional story.

The variety and the degree of processing matter.

The science of a good idli

The magic of idli doesn't come from rice alone.

It comes from the interaction between rice, urad dal, water, grinding and fermentation.

During fermentation, naturally occurring microorganisms in the batter metabolise available carbohydrates and produce organic acids and carbon dioxide.

This changes the batter's:

  • Acidity

  • Aroma

  • Texture

  • Gas-holding capacity

  • Fermentation behaviour

When the fermented batter is steamed, the gas cells expand and the proteins and starches set, creating the familiar soft and porous structure of idli.

So when you choose an idli rice, you are choosing one component of a much larger food system.

How to make idli with Adukumalli Rice

A traditional starting ratio is:

3 parts Adukumalli Idli Rice : 1 part Urad Dal

The exact ratio can be adjusted depending on the urad dal, soaking conditions, grinder and the texture you prefer.

Step 1: Wash and soak

Wash the rice thoroughly and soak it in clean water for approximately 2 hours.

Soak urad dal separately for just 30 mins if using Goodness Farm's Sprout activated deskinned urad dal.

Step 2: Grind

Grind the soaked urad dal until light and fluffy usinf ice cold water.

Grind the rice to a smooth or slightly grainy consistency according to your preferred idli texture.

Step 3: Combine

Mix the rice and urad dal batter thoroughly.

Add salt according to your preference.

Step 4: Ferment

Keep the batter in a warm place and allow it to ferment naturally until it becomes aerated and increases in volume.

Fermentation time varies with temperature, season and the activity of the microorganisms naturally present in the batter.

Step 5: Steam

Pour the fermented batter into greased idli moulds and steam until cooked for 10 mins.

Serve warm with:

Sambar | Chutney | Idli Podi | Gingelly Oil | Coconut Chutney

More than just idli

Although the name says Idli Rice, this rice can be used in other traditional preparations as well.

Try it for:

  • Idli

  • Dosa

  • Uttapam

  • Paniyaram

  • Soft dosa batter

  • Traditional fermented rice preparations

Its best use, however, is where its name suggests:

a beautifully fermented South Indian idli.

Why Goodness Farm Adukumalli Idli Rice?

Indigenous variety

We chose Adukumalli as part of our effort to bring lesser-known regional rice varieties back into everyday cooking.

Suitable for traditional idli

The grain is selected for its performance in fermented idli batter.

Thoughtfully processed

We avoid unnecessary over-processing and aim to retain the natural character of the grain.

Lab analysed

Our nutritional analysis helps us understand the actual characteristics of the rice rather than relying only on generic rice nutrition tables.

Fibre-conscious choice

Our analysis showed notable dietary fibre compared with the regular idli rice used as our reference.

Traditional food, modern understanding

We combine traditional grain diversity with food-science-based processing and testing.

Our philosophy

We don't believe that every indigenous grain needs to be called a “superfood.”

Sometimes its value is simpler.

A variety has survived because farmers grew it, cooks knew how to use it, and families found it useful.

Adukumalli is a rice we want you to know again.

Not because it needs exaggerated claims.

But because India's rice diversity deserves a place in our kitchens.

And sometimes, preserving food heritage can begin with something as ordinary as making idli for breakfast.
