🌾 Processing of Foxtail Millet Vermicelli


Ingredients Composition

  • Sprouted Foxtail Millet Flour – 100%
  • Water – RO treated

🛠️ Processing Steps

1. Selection & Cleaning of Grains

  • Foxtail millet are selected for quality.
  • Grains are cleaned thoroughly to remove husk, stones, and dust.
  • Washed in RO-treated water to ensure hygiene and purity.

2. Sprouting Process

  • Soaking: Grains are soaked in RO water for 6–8 hours.
  • Germination: Soaked grains are sprouted under controlled humidity (75%) and temperature (25–30°C) for 24–36 hours.
  • Drying: Sprouted grains are gently dried at <50°C to retain nutrients and natural enzymes.

3. Milling & Flour Preparation

  • Dried sprouted grains are hammer-milled to a fine flour (100–150 microns).

4. Dough Preparation

  • Flour is mixed with RO water and kneaded into a soft, pliable dough (~30% moisture).
  • Dough is rested for 30–45 minutes for hydration and mild gluten activation.

5. Extrusion & Vermicelli Formation

  • Dough is passed through a fine-extrusion die to form vermicelli strands (1–1.5 mm).
  • Strands are cut into 5-6 cm lengths.

6. Drying

  • Air-dried or tray-dried at 45–50°C until moisture is below 10%, ensuring long shelf life and quick cookability.

7. Packing & Storage

  • Vacuum-packed or sealed in moisture-proof pouches.
  • Shelf life: 4–6 months when stored in cool, dry conditions.

🍽️ Recipe Ideas Using Foxtail Millet Vermicelli


1️⃣ Foxtail Millet Lemon Sevai

Ingredients:

  • 1 cup vermicelli, 1/2 tsp mustard, 1 green chilli, 1 tbsp lemon juice, 1/4 tsp turmeric, curry leaves, salt, 1 tbsp sesame oil

Method:

  1. put the vermicelli in hot water for a min. Drain.
  2. In a pan, temper mustard, chilli, turmeric, curry leaves.
  3. Add vermicelli and salt. Toss well.
  4. Finish with lemon juice. Serve warm!

2️⃣ Foxtail Millet Sweet Payasam

Ingredients:

  • 1/2 cup vermicelli, 2 cups coconut milk/milk, 3 tbsp jaggery powder, cardamom, chopped nuts, ghee

Method:

  1. Roast vermicelli in ghee.
  2. Add milk, simmer until soft.
  3. Stir in jaggery and cardamom.
  4. Top with toasted nuts.

3️⃣ Foxtail Millet Stir-Fry

Ingredients:

  • Vermicelli, mixed veggies (beans, carrots, cabbage), ginger, sesame oil

Method:

  1. Sauté ginger and vegetables in oil.
  2. Toss vermicelli. add in boiling water of 250-300ml for a whole pack. Cover and cook for 2-3 mins.
  3. Serve warm for a guilt-free comfort meal!
