A nostalgic Kerala favourite with a simple twist — crisp banana upperi coated in a delicate layer of jaggery.
Our Jaggery-Coated Upperi brings together the natural sweetness of jaggery and the satisfying crunch of traditionally prepared banana chips. A beautiful tea-time snack or festive treat, inspired by the flavours of the traditional Kerala kitchen.
Ingredients
Raw Nendran Banana / Nendran Plantain
Jaggery
Dry Ginger Powder
Cumin Powder
Cardamom Powder
Coconut Oil or traditionally used frying oil
A small quantity of water
Preparation
1. Prepare the Banana
Select firm, mature raw Nendran bananas. Peel and slice them into thin, even pieces.
2. Fry the Upperi
Deep-fry the banana slices until they become crisp and golden. Remove and allow excess oil to drain completely.
3. Prepare the Jaggery Syrup
Melt jaggery with a small amount of water and strain it to remove any impurities.
Cook the syrup until it reaches the appropriate coating consistency.
4. Add the Spices
Add a small quantity of dry ginger, cumin and cardamom powder to the jaggery syrup. These traditional spices add warmth and aroma.
5. Coat the Upperi
Add the fried banana chips to the warm jaggery syrup and mix gently until the syrup evenly coats the upperi.
Spread them out and allow them to cool. As the jaggery cools, it forms a delicate coating around the crisp banana pieces.
